Chipotle Black Bean Tacos

Tacos! What's not to love about tacos?! I'm a firm believer that there shouldn't be just one star of the show when it comes to taco goodness. Each element needs to play its part in the flavour explosion!

These are a great one for dinner parties as everyone gets to choose their own magical taco adventure.


Chapter One

  • 400g tin black beans, drain and rinse (approx. 270g once drained)

  • 1 cup of frozen corn

  • 2 spring onions, roughly chopped

  • 1 tsp smoked paprika

  • 1 tsp sweet paprika

  • 1 tsp cumin

  • 1 tsp coriander powder

  • 1 tsp powdered vegetable stock

  • 1 tsp chipotle adobo sauce

  • 1 tbsp olive/vegetable oil (for frying)

  • 1 cup of boiling water

Chapter Two

  • 1 large, ripe avocado, smashed

  • 1/2 lime, juiced

  • Salt and pepper to taste

Chapter Three

  • 1 tbsp mayo

  • 1 tsp chipotle adobo sauce (a few glugs of Tabasco will work in a similar way, if you cant get hold of chipotle, but it just won't be the same)

  • Little squeeze of lime juice

Chapter Four

  • 2 cups of red cabbage, finely shredded

  • 1 cup of carrot, grated or julienned

  • 1 tomato, diced

  • 1/2 cup of pineapple, diced

  • 1/2 cup of grated cheddar (optional)

  • 1/3 cup of chopped coriander

  • 1 packet of corn tortillas (these Mission ones are my favourite)

Making of the Story

Chapter One

Start by frying off your spring onions in a pre-heated pan, with a drizzle of olive oil.

Add the corn and black beans, stir for a minute then add all your spices and chipotle adobo sauce. Once everything is well incorporated, add your cup of water and leave on a low simmer with the lid on for 5 - 10 minutes. You want the sauce to become thick and rich, but not too dry.

Chapter Two

Cut one large avocado in half and remove the stone. Using a spoon, scoop out the flesh into a bowl. Squeeze your lime juice over the avocado and mash until no large chunks are left. Season to taste with salt and pepper.

Chapter Three

Mix a large table spoon of good quality mayonnaise with a teaspoon of chipotle sauce and a squeeze of lime juice. Mix well.

Chapter Four

Prepare all your ingredients as instructed in Chapter Four and set aside in individual bowls. Feel free to really make this your own and add anything extra you like or swap out anything you're not a fan of. Warm your tortillas through, and get assembling.

Fill the tacos in whatever way your heart desires, there are no rules - just have fun and enjoy.
