This is a quick, simple and super-tasty slaw. I love using pink lady apples as they add a beautiful touch of sweetness, and pair well with fattier cuts of meat such as pork belly, sausages or beef brisket. It's an easy one to prep in the morning, then just dress later when needed. The colours are so vibrant, it just screams summer BBQ!
1/2 red cabbage, finely shredded
1/2 white cabbage, finely shredded
1 or 2 carrots, grated or finely julienned
1 pink lady apple, cut into matchsticks
Small bunch of chives, roughly chopped
Juice of one lemon
2 tbsp mayonnaise
S & P to taste
Coat the apple in a little lemon juice - this will stop it from going brown and keep it looking white and crisp. Then add all ingredients from Chapter One into a large bowl. Give everything a good mix together.
Just before serving, dress the slaw with items from Chapter Two, then garnish with an extra sprinkling of chives.
