Mexican Inspired Salsa

This salsa can add that zing to so many things. You can serve it with tacos, burritos, add it to a salad, on top of fish or just serve it up with a big bowl of corn chips. Makes an awesome movie night snack too.


  • 2 large tomatoes, de-seeded and quartered

  • 1/2 red onion, roughly diced

  • 1 large handful of coriander, washed and big stalks removed

  • 1/2 red chilli, roughly chopped (test the chilli by placing a small part on your tongue to indicate the spiciness)

  • 2 garlic cloves, whole

  • 1 spring onion, roughly chopped

  • Juice of 1 whole lime

  • 2 tbsp light olive oil. (don't use extra virgin as it is too strong tasting for this delicate salsa. If you don't have light olive oil, skip the oil and just add a squeeze of the lime juice to help it blend)

  • S & P to taste


Add all of the ingredients (except lime juice and oil) into a processor. Blend until everything is combined but still chunky, stop the processor and add the oil. Continue blending for a few more seconds until the oil has binded everything together and there are no more big chunks of anything.

Check for seasoning and add more chilli if needed or more S & P.

If your chillies aren't doing it for you, you can always add a few drops of Tabasco or your fav chilli sauce to give it the kick you like.

Serve with a bowl of your favorite corn chips.
